Looking at the new releases, Cable and X-Force #1-C and #1-D have sale dates of 12/19/12. This came out last week, on 12/12/12. Is this a mistake (I noticed that the actual covers were added to the books instead of promo art), or were they delayed, like the DF variants seem to be, for some reason?

#2 should be 12/19, not #1.

Marvel did not ship the Joe Quesada variants for #1 on time. They were released on 12/19/2012. The same time that #2 came out. I have fixed the dates and put a note on them.
