Alright I’ll start with some small scale characters. Yes I know the title of the thread is most powerful, and technically they have tons of powers, so in a way they do fit the description.
The cast of Raising Dion Admittedly this is one Netflix series I haven't watched yet, but seeing their power listings, holy cow did the creator just give these characters whatever came to mind. Here's the main character Dion's powers. Basically he has Ion manipulation (nice play on D-ion's name there creators) that essentially allows him to create any powers he wants.

Ava Silva from Warrior NunA normal girl who died then had a magical halo inserted in her back, giving her a whole bucket list of powers like energy blasts, super strength, levitation/flight and even running on water. Then the creators just gave her a whole bunch of powers as listed on her wikia.

The series did a twist by revealing Queen Sorsha made her think she was just a regular human, therefore never knew of her powers. She eventually taps into her magic and throughout the episodes, is basically learning several new tricks each episode. If the series actually lasted for all 3 seasons, I'm legit curious how powerful she would've been by the end of the 3 season run.
